It's hard on both your taste buds and your mind to make a sudden switch from two pats of butter on your veggies to a single squirt of lemon. That's why nutritionists and diet experts don't recommend a drastic reduction in fat intake overnight.

If it's your goal to reduce the amount of fat in your diet, do it gradually.

Start by cutting back on fatty ingredients:

Use one tablespoon of cream--not two--in your soup recipe.

Replace half of the oil in your coffee cake with plain nonfat yogurt.

Instead of sauteing vegetables in a lot of oil, try using half the usual amount and adding a splash of wine for flavor.
