Turkey Loaf by Christine Lydon, MD

Prep time: about 20 minutes, plus 20 minutes to cool

INGREDIENTS

1˝ pounds ground turkey
2 cups garbanzo beans, mashed
1 cup grated carrot
1 onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
2 large eggs, lightly beaten
2 tablespoons worcestershire sauce
1 tablespoon brown sugar
2 tablespoons fresh dill
1/2 tea spoon seasoning salt
3 tablespoons extra virgin olive oil, divided 2:1

DIRECTIONS

1. In a small skillet, saute carrot, onion, and garlic in 1 tablespoon extra virgin olive oil until tender.

2. Preheat oven to 350°.

3. In a large bowl, combine ground turkey, carrots, mashed garbanzo beans, garlic, eggs, tomatoe paste, and worcestershire sauce, brown sugar, dill, and two tablespoons extra virgin olive oil. (Clean hands work best for mixing.)

4. Grease 9” x 5” loaf pan with splash of extra virgin olive oil.

5. Add turkey mixture to loaf pan and pat flat. Bake on middle rack for 60 minutes.

6. Remove from oven and let cool and set for 20 minutes before serving.
