Recipe: Tangy & Tropical Couscous Print E-mail

Tangy & Tropical CouscousNeed a perfect summer side dish? Try this alongside chicken, fish, grilled veggies...or atop your favorite main course salad. It meets the "easy" criteria: Quick, simple and delicious.  (And it's even good as leftovers!)

Serves 6
 

INGREDIENTS
2 cups chicken broth
1 ½ cups instant couscous
1 cup seedless grapes
¼ cup slivered almonds
½ cup dried cranberries
1 cup mandarin oranges, canned in juice
½ cup greens onions, sliced
½ teaspoon black pepper
½ teaspoon cinammon
¼ teaspoon cayenne pepper
2 Tablespoons olive oil
½ cup lemon juice

DIRECTIONS

1. Heat chicken broth in saucepan until boiling. Remove pan from stovetop, and add couscous. Cover and allow to stand until cool. Fluff with a fork.

2. Transfer couscous into a large mixing bowl. Add grapes, almonds, cranberries, oranges and green onions.

3. Add remaining ingredients to couscous mixture. Allow flavors to blend for half an hour before serving. May be served chilled or at room temperature.
