Kacy's Sauteed Shrimp with Asparagus and Brown Rice

INGREDIENTS:

  • 1 tablespoon light olive oil
  • 1/2 cup sliced asparagus
  • 1 small tomato, diced
  • Salt and pepper to taste
  • 5 to 6 fresh large shrimp (clean and deveined)
  • Cayenne pepper (optional)
  • 1 to 2 scallions, sliced
  • 1/2 cup cooked brown rice

 

DIRECTIONS:
 
1. Heat olive oil in a medium sauté pan. 
2. Saute asparagus 4 to 5 minutes over medium heat. 
3. Add diced tomato and season with salt and pepper; cook another 3 minutes. 
4. Season shrimp with salt, pepper, and cayenne pepper (if desired). 
5. Add shrimp to pan and reduce heat to medium-low; cook 5 minutes. 
6. Top with sliced scallions and serve over brown rice.
