A Thanksgiving Veggie Fake-Out Print E-mail

What’s your favorite Thanksgiving treat?  If you are like most people (yours truly included) you probably can’t wait for those fat-laden, carbohydrate-dense side dishes that will fill so many of our dinner plates.  It may seem like there is no room on the holiday table for a healthy, fiber-rich dish to go along with all the bold flavors that will be present…but I have a secret up my sleeve for a side dish that will help you to get a fantastic dose of fiber and nutrients, that your family will never suspect is a Thanksgiving veggie fake-out.

Kitty’s Sweet Potato Mash
(serves 4 as a side)
 
3 orange-fleshed sweet potatoes (sometimes sold as yams), peeled and cubed
1 large carrot, peeled and sliced
1 cup pre-cubed butternut squash
1/2 cup half & half
1/2 cup low fat milk
1 tablespoon butter
1/2 teaspoon freshly grated nutmeg
salt & pepper to taste

In a large microwave-safe bowl, add a small amount of water, along with the potatoes, squash, and carrot. Cover the bowl tightly with plastic wrap, and pierce a few times to release steam.  Microwave on high for 3 minutes or more, until the veggies mash easily with a fork.  Meanwhile, in a small saucepan, gently heat the milk and half & half along with the butter, nutmeg and salt & pepper.  Add the cooked veggies to the saucepan, and mash with a potato masher until you’ve reached the desired consistency.  Experiment with adding a little cinnamon and/or ground ginger.

This easy microwave recipe is a great one on a day when the oven is already operating at full capacity.  If you’d like, add a bit of brown sugar to the mixture as well, but the veggies themselves have a delicious sweetness all on their own. Happy Thanksgiving!
