Recipe: Chicken or Beef Fajitas Print E-mail

You can use leftover steak or cooked chicken breast strips in this quick dinner that is sure to please.  Taken from The Feel Good Diet, written by Cheryle R. Hart, M.D.

INGREDIENTS
1 teaspoon vegetable oil
1 medium onion, sliced
2 red, yellow, or green peppers, cut into thin strips
½ pound thinly sliced broiled beef or cooked chicken breast strips
(Raw beef strips or chicken breast tenders can also be used
and quickly stir-fried before adding veggies.)
2 cloves garlic, chopped fine
¼ cup ketchup
1 teaspoon liquid smoke flavoring
½ teaspoon chili powder
2 medium fresh tomatoes, diced
Fresh cilantro (optional)
4 La Tortilla Factory low-carb whole wheat tortillas
Fat-free sour cream, salsa (optional)

INSTRUCTIONS             
Heat vegetable oil in a large skillet. Add onion and stir-fry on
medium-high heat for 1 minute. Add peppers, and continue to
stir-fry for another minute. Reduce heat to medium. Add chicken
or beef and garlic. Heat thoroughly. In a small bowl, mix ketchup,
smoke flavoring, and chili powder. Add to skillet, stirring gently to
coat all pieces. Just before serving, add tomatoes and cilantro. Serve
with warmed tortillas, fat-free sour cream, and salsa, if desired.

This is an awesome recipe! I baked my chicken beforehand in liquid smoke seasoning, cliantro, and black pepper. I also doubled the ketchup/smoke seasoning sauce, and I had seven servings, but my tortillas may have been smaller. I added a small amount of fat free cheddar, and it was just so good. A !
