Recipe: Avocado Chicken Salad Sandwich Print E-mail

Need a healthy, quick use for leftover chicken? (Don't worry, it's not dry...) The slaw is a great side kick. 1 cup cooked and diced chicken, about 3 ounces
½ cup diced celery
¼ cup light mayonnaise
2 tablespoons diced avocado
2 teaspoons lemon juice
dash salt and pepper
8 slices whole grain bread or other bread of choice
 
In medium bowl, combine all ingredients, except bread. Spread mixture on 1 slice of bread. Top with second slice. Cut into half to serve.

Healthy Sweet & Sour Slaw

This delicious slaw will keep in the refrigerator for at least a week. It’s a great complement to a meal or as an enhancement to a sandwich.

5 cups shredded cabbage (may use pre-cut packaged cabbage)
1 medium red bell pepper, chopped
1 onion, chopped
1 cup canned yellow corn (drained)
1/3 cup sugar
1/2 cup rice vinegar
Salt and pepper, to taste
1 tablespoon finely minced jalapeno pepper, seeds and veins removed, optional

In large bowl, toss cabbage, red pepper, onions and corn together. In a small bowl combine sugar into rice vinegar. Sprinkle cabbage mixture with salt and pepper, as desired. Pour vinegar mixture over cabbage and toss well.
 
Store in airtight container. Refrigerate for at least two hours before serving.
