Recipe: Sautéed Apple Crisp Print E-mail

Apple crisp is such a great, homey food. We know it's not cold out, but don't worry...there's no need to heat up the oven. (And besides, cool August mornings aren't too far off, right?) This stove-top twist to apple crisp couldn't be easier or quicker to make--even on a busy weeknight. Use tart green apples for a bright apple flavor. It's taken from Ending the Food Fight by David Ludwig.
Yield: 4 servings

2 tablespoons high oleic safflower oil
4 tart green apples, peeled, cored, and cut into small bite-size chunks
1 tablespoons maple syrup
1/2 cup granola

Heat the oil in a medium skillet over medium heat. Add the apples and cook, stirring often, until golden brown and beginning to soften, 3 to 5 minutes. Add the maple syrup and continue cooking until the apples are tender when pierced with the tip of a small sharp knife, 3 to 5 minutes more.

Divide the hot apples among four bowls. Sprinkle the granola over the top of each serving and serve.
 
Side Note: We asked Dr. Ludwig for the nutrient information for this recipe and here's what he said.." we specifically didn't do these analyses for the recipes, wanting to get readers away from the tendency to "eat by the numbers."  So just eat and enjoy, and know it's healthy in moderation.
