Recipe: Pepperminty-Chocolate Cupcakes Print E-mail

Chocolate and peppermint are perfectly paired in this delicious treat--that's almost as fun to make as they are to eat!

Makes 1 Dozen

INGREDIENTS
1 package of deep chocolate vita mix**
2 egg whites
1¼-cup water
1 teaspoon of Mint Flavored extract
Cool Whip Free
2 crushed Red & White Candy Cane (use starlite mints, if candy canes are not available)
 
DIRECTIONS
1. Prepare Deep Chocolate VitaMix according to package instructions.
2. Add Mint flavored extract. Mix well.
3. Bake in festive aluminum baking cups for about 25 minutes.
4. Allow thorough cooling.
5. Dip muffin top side down into ‘frosting" and top each frosted cupcake with crushed peppermint candy. Enjoy!

Tip: Do not frost cupcakes until ready to serve. That way you can still freeze any unused, unfrosted cupcakes for later.
