Recipe: Cherry-Cherry Chocolate Cupcakes Print E-mail

The best part about a cupcake is that you get to eat the WHOLE thing.  The even better part about these cupcakes is that you can eat them, and still feel good about it later.  (Plus they're easy to make, and look and taste like a gourmet treat!)

Makes 1 Dozen

INGREDIENTS
1 package of deep chocolate vita mix**
2 egg whites
1 ¼ cup of water
¼ cup of Cherry flavored Craisins or dried cherries
1 teaspoon of cherry flavored extract
Cool Whip Free
12 Maraschino cherries to Decorate
 
DIRECTIONS
1. Prepare Deep Chocolate VitaMix according to package instructions.
2. Add Cherry flavored extract and dried cherry pieces. Mix well.
3. Bake in festive aluminum baking cups for about 25 minutes. Allow thorough cooling.
4. Dip muffin top side down into ‘frosting” and top each frosted cupcake with 5. Maraschino cherry. Enjoy!

Tip: Do not frost cupcakes until ready to serve. That way you can still freeze any unused, unfrosted cupcakes for later.
