Recipe: Toasted Berry Nut Cake Print E-mail

The toasted coconut on top of this delicious cake will have everyone fooled.  How good it possibly a good, healthy choice?  (And even better for you is that you can whip it up in minutes, from an easy mix!)

Serves 12

INGREDIENTS
1 package of Blue Bran Vita Mix**
2 egg whites
1¼-cup water
1 teaspoon of vanilla Flavored extract
¼ cup Craisins or dried cranberries
¼ sliced almonds
¼-shredded coconut (sweetened or unsweetened variety)
 
DIRECTIONS
1. Prepare Blue Bran VitaMix according to package instructions.
2. Add vanilla flavored extract, sliced almonds & Craisins.
3. Spray Non-stick Square or rectangular cake pan well.
4. Spread cake mixture evenly.
5. Top with shredded coconut
6. Bake 20-27 minutes

Tip: Watch cake carefully. Although you do want coconut to toast to a beautiful golden brown it can burn easily. Check with toothpick test after 20 minutes.
