Recipe: Cran-Blue Minis Print E-mail

If you love fresh baked muffins, but don't care for the calorie overload and fat attack that comes along with most muffins, try these. They are healthy, delicious, and a snap to throw together, right from a mix.  Can you smell them baking already??

Makes 2 Dozen, (Requires mini 1 oz. muffin tin)

INGREDIENTS
1 package of Blue Bran Vita Mix**
2 egg whites
1¼-cup water
1 teaspoon of vanilla Flavored extract
¼ cup Craisins or dried cranberries
1 tablespoon cinnamon
 
DIRECTIONS
1. Prepare Blue Bran VitaMix according to package instructions.
2. Add vanilla flavored extract and crasins. Mix well (batter will be very lumpy).
3. Spray non-stick mini baking pans well. Scoop spoonfuls of batter into baking cups.
4. Bake for about 20 minutes.
5. Serve warm.

Tip: If you don't have a mini muffin pan, a standard muffin tin will do. Increase baking time 1-7 minutes.
