Banana Bread is definitely a treat to eat only on special occasions.  Traditional recipes usually call for plenty of oil or shortening, making it very high in calories.  This recipe gives you all the goodness, and none of the grief.  (And it's quick and easy, too!)

Makes 12 servings

INGREDIENTS
1 package of sugar free banana nut vita mix**
2 egg whites
1 cup water
1 small ripe mashed banana
1 tablespoon of maple syrup
˝ cup of crushed walnuts and sliced almonds
1 teaspoon of vanilla Flavored extract
2 tablespoons of powdered sugar or sugar substitute (optional)

DIRECTIONS
1. Combine Sugar-Free Banana-Nut VitaMix, water, mashed banana and egg whites in large bowl.
2. Add maple syrup and vanilla extract and mix well.
3. Add half of nut mixture to batter.
4. Spray non-stick decorative bunt or other cake pan well.
5. Add other half of nut mixture to bottom of pan and then pour batter mixture evenly on top.
6. Bake 25-28 minutes.
7. Allow cooling. Carefully remove cake and place on decorative plate. Sprinkle lightly with powdered sugar (optional) Enjoy!
Tip: Slice cake in 12 equal pieces. Wrap unused slices in wax paper or plastic wrap and freeze for later.
