Recipe: Bacon, Lettuce, and Tomato Sandwiches with Basil Mayonnaise Print E-mail

This is a healthy take on a Family Standard, taken from Good Housekeeping's The Supermarket Diet, by Susan Westmoreland.

Prep 10 minutes   Cook 10 minutes   Makes 4 servings

INGREDIENTS
12 slices reduced-sodium bacon (8 ounces)
1⁄3 cup light mayonnaise (such as from Kraft or Hellman’s)
1⁄2 cup loosely packed fresh basil leaves, finely chopped
1⁄2 teaspoon freshly grated lemon peel
1⁄8 teaspoon coarsely ground black pepper
8 slices whole-wheat bread, toasted
2 large ripe tomatoes (12 ounces each), sliced 1⁄4 inch thick
Boston lettuce leaves

DIRECTIONS
1. In 12-inch skillet, cook bacon over medium heat until browned, 10 minutes. Transfer bacon to paper towels to drain.
2. Meanwhile, in small bowl, mix mayonnaise, basil, lemon peel, and pepper until blended; set aside.
3. Spread mayonnaise mixture on 4 bread slices. Top with bacon, tomato, lettuce, then remaining bread.

much less fat and calories using Turkey bacon and good taste
