Recipe: Tomato-Wild Rice Medley Print E-mail

Personalize this recipe by adding your favorite veggies, like mushrooms or broccoli . . . anything goes!

Serves 3

INGREDIENTS
1 Tbs olive oil
2 Tbs lemon juice
3/4 tsp salt
1/2 tsp black pepper
2 cups wild or brown rice (measured after cooking according to package directions, no added fat)
1/4 cup green onions, chopped
1 tomato, diced
1 Tbs parsley, chopped
1 Tbs mint, chopped (optional)

DIRECTIONS
1. In medium-sized bowl, beat oil, lemon juice, salt, and pepper.
2. Add remaining ingredients and stir well. Refrigerate at least one hour.
3. Serve cold.
