Recipe: Zucchini, Pepper, and Yellow Tomato Stir-Fry Print E-mail

Toss other in-season vegetables into your stir-fry for extra variety. 

Serves 4

INGREDIENTS
1 large onion, chopped
1 red pepper, diced
1 large or 2 small zucchini, sliced
2 yellow tomatoes (or other tomatoes), sliced
2 tsp basil
1 tsp garlic powder
1 tsp seasoned salt
1/2 tsp black pepper
Vegetable cooking spray such as PAM for sautéing

DIRECTIONS
1. Spray nonstick pan with PAM and saute onions until lightly browned.
2. Add pepper, zucchini, and tomato slices. Add spices and mix until thoroughly blended.
3. Cook on high flame 5 minutes. Reduce to low flame and allow to simmer until zucchini is soft (about 5-10 minutes depending on thickness of the slices).
