Recipe: Vegetable Packets |

A yummy summer vegetable combination.
Serves 4
INGREDIENTS
1 zucchini, sliced
1 yellow summer squash, sliced
1 small red onion, sliced
4-5 small red potatoes, sliced
1 tbsp Parmesan cheese
1/4 cup red wine vinegar
1/4 tsp pepper
1/4 tsp salt
1 1/2 tsp Italian spice
DIRECTIONS
1. Preheat oven or grill to about 375 degrees.
2. In a large bowl, mix all ingredients.
3. Using aluminum foil, make a packet large enough to hold all ingredients.
4. Add ingredients to aluminum packet and seal.
5. Grill or bake for about 20-30 minutes or until potatoes are tender
