Recipe: Passover Baked Stuffed Zucchini Print E-mail

This quick side dish is the perfect accompaniment to any meal during Passover.

Serves 2

INGREDIENTS
2 zucchini
1 small onion
1 clove garlic
˝ tsp parsley
4 Tbsp tomato sauce
2 Tbsp matzo meal

DIRECTIONS
1. Preheat oven to 450°.
2. Wash zucchini cut into half, lengthwise and scoop out the pulp. Finely chop onion and mince garlic.
3. Heat pulp, onion, spices and sauce in a pan for 5 minutes.
4. Add matzo meal to mixture and mix well.
5. Re-stuff zucchini with mixture.
6. Place in a baking dish with a little water on the bottom. Bake for 30 minutes or until zucchini shells are soft.
