Recipe: Sweet and Sour Pork Print E-mail

Experiment with this pungent dish by adding your own spice blend. 

Serves 4

INGREDIENTS
3 Tbsp flour
1/2 tsp salt
1/4 tsp pepper
3/4 lb pork tenderloin, sliced 1/4 inch thick
1 Tbsp olive oil
1 cup onion, chopped
3/4 cup apple juice
3/4 cup fat free chicken broth
4 garlic cloves
1 large sweet potato
2 apples (Granny smith or Red Delicious)
3 scallions, chopped
1 cup pineapple tidbits

DIRECTIONS
1. Mix together 2 of the tablespoons of flour with pepper and salt. Dip pork slices in flour until coated on all sides.
2. Mix last tablespoon flour with apple juice.
3. Slice apple and potato into 1/2 inch thick slices.
4. In large pan, heat pork, garlic, and onion in the olive oil until pork is lightly browned. Add apples, sweet potato, pineapple, scallions, apple juice mixture, and broth. Continue to heat until boiling, then reduce and allow to simmer 20 minutes.
