Recipe: Snap Peas Almondine Print E-mail

A snappy side dish. 

Serves 4

INGREDIENTS
¼ cup sliced almonds
Cooking spray
1 lb. fresh sugar snap peas, ends trimmed
3 T. lemon juice
¼ tsp ground pepper

DIRECTIONS
1. Preheat oven to 400 degrees F.
2. Spread almonds on baking sheet and toast in oven 8-10 minutes, or until almonds are lightly golden.
3. Transfer almonds to a cutting board and finely chop (you can also use a food processor for this step)
4. Lightly spray a large skillet with cooking spray. Over medium heat add peas, lemon juice and pepper. Stir until all ingredients are combined and heated through (about 2 minutes). Remove from heat
5. Transfer to a bowl. Sprinkle with almonds and toss to coat. Serve and enjoy!
