Recipe: Pumpkin Au Gratin Print E-mail

Enjoy this steaming pumpkin dish!

Serves 4

INGREDIENTS
6 cups pumpkin, peeled and cubed
Pam
1 1/2 cups onions, chopped
1/4 cup all-purpose flour
2 cups fat free chicken broth
1/4 teaspoon ground nutmeg
1/4 teaspoon black pepper
3/4 cup low fat Swiss cheese, shredded
10 ounces frozen chopped spinach

DIRECTIONS
1. Prepare pumpkin: Fill large saucepot with water and bring to a boil. Add pumpkin cubes and boil until soft (around 8 minutes). Remove pumpkin from water.
2. Spray PAM or other cooking spray on large pan. Heat onion in pan until lightly browned. Add onions, along with spinach and 1/4 cup shredded cheese to pumpkin. Transfer mixture to a large baking dish.
3. Combine flour and broth in pan until thoroughly mixed. Heat on medium until mixture thickens. Cover pumpkin mixture with broth mixture, and top with remaining 1/2 cup cheese. Bake at 375 degrees for half an hour.
