Recipe: Fresh Green Bean and Tomato Salad Print E-mail

There are enough veggies here to make any mother proud.  And they'll taste so good you just might clean your plate! 

Serves 4

Serve warm or cold.

INGREDIENTS
4 cups green beans (about 3/4 lb)
1 tsp olive oil
1/2 cup sliced scallions
2-3 cloves minced garlic
2 cups tomato, seeded and thinly sliced (about 3/4 lb)
2 tbsp chopped fresh basil
Salt & pepper, to taste

DIRECTIONS
1. Steam green beans for about 5 minutes or until tender. Drain and set aside.
2. Heat oil in a large non-stick pan. Sauté scallions and garlic for 1 minute. Add green beans and sauté another 3 minutes. Finally, add tomato, basil, salt and pepper and sauté 2 more minutes.
3. Serve warm or cold.
