An easy way to meet some of your veggie requirements for the day.
Serves 4
INGREDIENTS
1 pound white mushrooms
1 red pepper
1 green pepper
1 clove garlic
4 Tbs red wine vinegar
1 tsp olive oil
1 Tbs fresh parsley (or 1 tsp dried parsley)
1 Tbs fresh chives (chopped)
Black pepper to taste
DIRECTIONS
1. Wash mushroom thoroughly and remove stems. Dice both red and green pepper.
2. Mince garlic clove. Combine garlic with next five ingredients in large bowl.
3. Add chopped peppers and whole mushrooms and mix until coated
evenly. Refrigerate at least 2 hours before serving, mixing
occasionally.
