Recipe: Blueberry Bran Muffin Print E-mail

Great for a mid-morning snack. 

Makes 12 muffins

INGREDIENTS
1 cup Shredded Wheat’N Bran Cereal
3/4 cup low-fat buttermilk
1 1/4 cups flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/4 tsp salt
1/2 tsp ground cinnamon
1/2 tsp allspice
1/2 cup granulated sugar
2 egg whites
3/4 cup unsweetened applesauce
1 cup blueberries

DIRECTIONS
1. Preheat oven to 375 °. Spray a 12-muffin tray with nonstick cooking spray or use muffin cups.
2. In a small bowl, combine bran cereal and buttermilk. Soak until cereal is soft.
3. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, allspice, and sugar. Mix thoroughly.
4. In a small bowl, mix egg whites and applesauce.
5. Pour blueberries into flour mixture.
6. Add both the bran mixture and the egg white mixture to the flour and stir well.
7. Spoon batter into the muffin pan.
8. Bake for 25-30 minutes. Remove from pan and let cool.
