"Halibut" eating this for dinner tonight?
Serves 4
INGREDIENTS
SALSA
1 cup diced fresh mango
1 cup fresh peaches, pitted and chopped
1 clove garlic, minced
1 tbsp fresh ginger root, peeled and grated
2 tbsp fresh basil, chopped
1 Serrano Chile pepper, diced
2 tbsp fresh lime juice
HALIBUT
2 tbsp light olive oil
2 tbsp fresh lime juice
1/2 tsp dried thyme
1/2 tsp dried basil
1/8 tsp dried rosemary
4 (6-ounce) filets halibut (or other fish of your choice)
DIRECTIONS
SALSA
1. In a small bowl, combine the mango, peaches, garlic, ginger, and basil (or try cilantro).
2. Add the chilies and lime juice to taste. Mix well.
3. Allow to chill for 2 hours before serving.
HALIBUT
1. Place fish filets in a large, shallow, glass baking dish.
2. In a small bowl, whisk together olive oil, lime juice, and herbs.
Pour marinade over fish. Cover and refrigerate 2 to 4 hours.
3. When ready to cook, remove fish from marinade and place on pre-heated grill. Discard marinade.
4. Cook 10 minutes per inch of thickness of filets, or until fish flakes with a fork. Turn once to brown both sides.
