Recipe: Curried Couscous Print E-mail

An India staple. 

Serves 2

INGREDIENTS
1 tsp olive oil
1/4 tsp curry powder
1/8 tsp allspice
1 1/3 cups fat-free, low sodium chicken broth (or vegetable broth)
2/3 cup uncooked couscous
2/3 cup canned chick peas, rinsed & drained
1 cup frozen green peas

DIRECTIONS
1. Heat oil in a medium saucepan. Add curry and allspice. Cook for one minute stirring constantly.
2. Add broth and bring to a boil. Stir in the couscous, peas, and chick peas. Remove from the heat, cover and let stand for 5 minutes. Fluff with a fork before serving.
