Recipe: Chocolate Angel Food Cake Print E-mail

Sinfully delicious. 

Serves 8

INGREDIENTS
2/3 cup sifted cake flour
1/3 cup unsweetened cocoa
1/4 cup sugar
1/2 teaspoon ground cinnamon
12 large egg whites
1 teaspoon cream of tartar
2 teaspoons warm water
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup sugar

DIRECTIONS
1. Preheat oven to 350°F.
2. Sift together flour, cocoa, 1/4 cup sugar, and cinnamon.
3. In separate bowl, whip egg whites with cream of tartar, water, vanilla, and salt at high speed until foamy. Continue to beat as you spoon in 1 cup sugar (2 tablespoons at a time) until stiff peaks form.
4. Carefully fold flour mixture into egg whites, 1/4 cup at a time.
5. Gently pour batter into ungreased 10-inch tube pan, and cut through batter with a knife to break air pockets. Bake at 350°F for 45 minutes or until cake springs back when lightly touched. Turn pan upside down to cool.
