Recipe: Cheddar Casserole Print E-mail

A great Mac N Cheese alternative. 

Serves 8

INGREDIENTS
2 tsp reduced calorie margarine,  2 cup chopped bell pepper (red and green mixed)
½ c Canadian bacon (if you prefer, use Bacos or other vegetarian “bacon”), flour
½ c onion
1 tsp chili powder
½ tsp salt
½ tsp cumin
2 ¼ c skim milk
2 c reduced fat cheddar cheese, shredded
8 c cooked pasta
Cooking spray

DIRECTIONS
1. Cook pasta according to directions. Set aside.
2. Preheat oven to 400°F2.
3. Melt margarine in large saucepan.
4. Add bell peppers and Canadian bacon, sauté 4 minutes. Add onions, sauté 1 minute. Stir in a bit of flour, chili powder, salt and cumin, cook 1 minute.
5. Gradually add milk, cook until thick and bubbly (~ 4 minutes), stirring constantly.
6. Remove from heat. Gradually add cheese, stir until it melts. Add pasta to cheese mixture. Serve.

Sounds good EXCEPT: Are you serious about 2 cups of bell peppers?
