Recipe: Breakfast Burrito Print E-mail

Spice up your morning routine.

Serves 2

INGREDIENTS
6 egg whites or 1 cup fat-free egg substitute
1/2 cup black beans, rinsed and drained
1/2 cup corn kernels
1/2 cup diced bell pepper
1/4 cup diced onion
2 oz shredded low-fat cheese (optional)
1/2 cup salsa
2 low-fat, whole-wheat flour tortillas

DIRECTIONS
1. Combine beans, corn, peppers, salsa, and onion and heat on stovetop or in the microwave.
2. While the bean mixture is heating, warm the tortillas in the oven.  Take them out before they get crunchy.
3. Coat a non-stick skillet with cooking spray and scramble the eggs with a little salt.
4. Remove tortillas from oven and put 1/2 the bean mixture on each.
5. Cover the bean mixture with 1 oz of cheese, and top with 1/2 of the eggs.
6. The heat from the bean and eggs should melt the cheese.
7. Roll up the tortilla and enjoy.
